Well I am not over 6 feet, though I constantly wish I were. Let me know if you have any specific questions. In terms of the head you are considering, it will work great with both tripods. If you don't have to carry the tripod around very much, go with the 700DX. If travel and hiking on your thing, go with the 3001. Sounds like you just need to dtermine how you will mainly use a tripod. I have really beat the heck out of my 700DX and it's still going strong. I have never had a problem with either tripod and have no reason to expect any anytime soon. In terms of build quality, they are both great and won't let you down. I have a second 700DX column that I cut off to let me do low level work. The 700DX has a long column and is not good for low level work.

The column can be taken out and an included insert can be use in place of the column to let you get low.

If you like to do low level work, the 3001 is better. I can use the 700DX with no column extention and have the camera just about at eye level. If you are near 6 ft tall or greater then the 3001 requires some bending down even with the center column extended all the way. When I travel or know I will be walking or hiking any distance, I take the 3001. When weight is not a concern, I use it without a doubt. The 700DX is a great tripod and extremely stable at all heights but it's big and fairly heavy. However, they are two very different tripods in terms of size and weight. I have these two tripods and use them both.
